Whether you make it meatless or not, serve it as a main dish or as a side dish for the holidays, you will love this butternut squash dish. It’s extremely flavorful, rich and decadent, but not overdone. The buttery, nutty Gruyere cheese goes very well with the butternut squash, and a little Dijon mustard balances out the sweetness and richness of this dish. Pair it with a salad to create a contrast in temperature and texture.

Ingredients:

  • 1 butternut squash (3 pounds).
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon Dijon mustard
  • 1 large egg, beaten
  • ¼ cup thinly sliced green onions, plus more for garnish
  • 10 ounces smoked ham, diced
  • 6 oz.
  • 2 ounces Gruyere cheese, grated
